for application TeachNow we are using the ObjectStore service provided by
the node Lannion for storing application data.
I'd like to know if and what guarantees are there for the maintenance and
automatic backup of that data.

Object Storage provides data replication not "traditional" backup. Anyway, thanks to the replication, data is "safe enough". Said that we discourage to keep only one copy of relevant/important data on FIWARE Lab without a backup made by the user on other infrastructures/means: remember that FIWARE Lab is for experimentation only!
